The subject of cdrw formatting is not at all clear to me. Can someone kindly point me to a site where I can find full info on this?

Are you talking about formatting a CDRW so that you can use it like a hard disc? If so then you need packet writing software such as DirectCD which comes with EZCD and WinonCD. Look here for a brief explanation from the Roxio site

Note that Nero, EZCD etc do not format discs.

Great, many thanks, you've put me on the right path. But what on earth is UDF? I don't seem to find a site where I can get a clear explanation on this.

I wouldn't worry too much about how all these formats work. Any decent burn proggie works it all out for you. Best just decide what you want to do & get the software that does it. EasyCD Creator is a good all-rounder which includes probably the best packet writing software (DirectCD).
