Can this program be used in place of Instant Copy for keeping menus and extras. If it can, I'll give it a try, if not, can someone direct me to another program that allows me to keep everything because Instant Copy does go way too slow

This is much better than Instant Copy mate.
It keeps everything from the original disc (if you want to keep everything), and processes in about a 10th of the time Instant Copy takes to do the same.
And the end result? Most people say better than Instant Copy and DVD2one - and I agree.

As someone said, the program comes with an excellent help file. I would suggest that you read it.

I agree about the help file it is truly excellent.
What puzzles me at the moment is this:- Going by a) This great prog with so many capabilities and b) The knowledgable and concise help file. This guy must really know his stuff yes? (Well a dumb@ss like myself thinks so anyway. lol)
But..... when it was pointed out to him over at the dvd-digest forums earlier this week that DVD Shrink did not remove the layer break from the finished DVDR the author asked what a "layer break" was?!?!?
Now to me there's something very weird about that question bearing in mind the facts about the prog & help file.
