I have mamex and n64 emu dvdr for xbox.

What works for me before on regular dvdr xbox is:

Using nero express and save the image into my pc hd then using nero express again, burned back to a blank dvd-r.

However, when doing the same for mamex and n64 emu. Nero express don't even let me rip an image into my hard drive. All most seem as though nero can't read the disc.

Should I use xISO and "extract all" into a pc hd folder and then just using nero express burned back as data into a blank dvd-r?

yup you pretty much answered your own question except don't burn back as a data disc- use xiso or simpleXiso and reform it into a iso and burn that iso with nero.
