I have a trial version of paint shop pro 8 and would be grateful for step by step advice on how to do this.

open up a new window after opening up image of son, open up monkey in new window, select head of monkey copy, go to image of son, paste move till it adjusts over son, save...print...

I can send you some of my passport photo's if you need a reference. :)

As far as taking you through a step by step guide in paint shop pro, it's a bit too much of a procedure for a forum's format. Just have a read of the help file.

I'm not sure if they still have it, but Jasc use to have a good guide on their site.

Make a copy first and play around with that to protect the original (Just so you can add more animal heads later :D )

Be aware that most formats apart from things like .TIFF lose quality everytime you do something to them, so the least you do the better the quality.
