I use "Cyber Sound Studio Pro". For a set of CASIO digital drums and two Yamaha keyboards
My friend who happens to be a real musician uses an old application for the mac called "Performer"

Personally I use Cubase VST 4.1, as my system is bad with that and I doubt moving up to 5 will help. I'm sometimes happy with it, but I think that my main reason for staying is the $$$ I've spent so far.
