What I am trying to do is to burn pictures onto a cd in different files AND at different times, i.e. animal shots, car shots (i'm a car buff), friends & family, etc. When I try to do this now, i end up with overwrite.

Well to start with when you first write the disc you must set the option to 'Start Multi-session Disc' and since these are data file it will need to be an ISO 9660 type. Plus is you want to use long file names set these options as well as enabling 'Joliet' in the settings.
Second when you go to write the next session you must 'Import' the first one.
I think the import option has checnged in newer versions of NEro, so it might help if we knew which version you are using?
