i've got an 80 gig (although its not got much space left) 720rpm seagate barracuda Hd in my xbox, the only time its ever got hot was when i left it on for a few days almost constantly playing games and movies.
(gonna do the side cooling mod on xbox-scene forums when i get paid)

Seagate barracuda drive is the best. Fast and reliable.

maxtor 120gb 7200 for me, no probs.

Has anyone who's used a Maxtor in a v1.1 xbox managed to lock the drive after install?
