Default question on ripping-- how to manage audio tracks?

Ok-- having a problemn when ripping.
I want to rip a DVD to my hard drvie,-- no compression, 1:1 copy.
Problem is, when I do this, on certain DVDs, I gewt "special" audio tracks.
For example, one one director's cut DVD, I'm getting the director's commentary over the normal sound.
On another DVD, it alternates languages: chapter 1 may be in einglish, chapter 2 may be in something else, like spanish.
How do I manage this? I don't want or need the extras. BTW-- I am using DVD decrypter (as per the advice of members of this board.)
